Get Your Apron On…. The Perfect Fall Dish: A two for one egg and potato skillet using leftovers.

Last year we posted this potato recipe.

If you don’t have leftovers, the next time you make it, double the recipe so you do!

Here’s what you’re going to do with the extras….

Egg and Potato Skillet
You will need…
2 pounds of potatoes
1 Onions
9 Eggs
1/2 of Ham {bacon or sausage can be used as a substitute}
2 cups of shredded cheese {of your choosing..we used an extra sharp cheddar}

The amount of eggs/potatoes/onions you need will vary depending on how many you are cooking for.
This recipe will serve 4.

Heat ham until slightly warm…add leftover potatoes and onions.
Stir in cheese until melted. Keep warm.
In separate pan cook eggs to your liking…we fried our eggs.

Gently add eggs to potato mixture.
Serve. Eat. Enjoy.

If you don’t have leftover potatoes, just follow our recipe here to make the potatoes at the same time as the skillet.
