Get Your Apron On….Simple Crepes With Homemade Blackberry Syrup.

Today as we continue our January breakfast series,
we are sharing a simple crepe recipe using our homemade blackberry syrup.
If you're not a fan of blackberries, feel free to substitute any berry.
We've tried them all and you really can't go wrong!!!

Basic Crepe
1 cup all-purpose flour
1/4 teaspoon salt
1 1/4 cups milk
2 large eggs
2 tablepoons butter, melted

Combine first three ingredients. Beat with whisk until smooth.
Add eggs..beat well.
Stir in butter.
Chill 1 hour.

Coat bottom of a crepe pan or heavy skillet {we use cast iron} with cooking spray.
Pour 1/4 cup of batter onto pan.
Cook 1 minute or until crepe can be shaken loose.
Turn crepe over and cook for 30 seconds.
Repeat with remaining batter.

*stack crepes between wax paper to prevent sticking.

Blackberry Sauce
1 cup of mashed {fresh or frozen} blackberries
1/4 cup of sugar
1 tablespoon lemon juice
2 tablespoons of water

Combine all ingredients in small pot and
bring to slow boil for 8-10 minutes or until thickened.

*Store the extra in a jar in the refrigerator up to 3 weeks.

Fill the center of the crepe with blackberry syrup and fold shut.
Top with whipped cream and powdered sugar.
{we also added some maple syrup to ours!}
